Blueberry Bliss Bites

These Blueberry Bliss Balls are one of those recipes you'll come back to again and again. Made with just a handful of wholesome ingredients — no baking required — they're the perfect guilt-free snack to keep in the fridge for when that 3pm craving hits. Packed with healthy fats, natural sweetness from medjool dates, and a beautiful burst of blueberry, they're as nourishing as they are delicious.

Ingredients

•         1½ cups desiccated coconut

•         ½ cup macadamias

•         10 medjool dates, seeds removed

•         Zest of one lemon

•         ½ teaspoon concentrated natural vanilla extract

•         Pinch of salt

•         ½ cup frozen blueberries

 

Method

1.       Add all ingredients into your food processor.

2.      Blend at high speed until the mixture is smooth and sticking together.

3.      Use your hands to press and shape the mixture into balls.

4.      Place the balls into the fridge to set for at least 30 minutes.

5.      Enjoy! Store in an airtight container in the fridge for up to one week.

 

Tips & Variations

•         Roll the finished balls in extra desiccated coconut for a pretty finish.

•         Swap macadamias for cashews or almonds if that's what you have on hand.

•         These freeze beautifully — make a double batch and keep some in the freezer for busy days.

•         Fresh blueberries can be used in place of frozen — just note the mixture may be slightly wetter.
